Korean food is a bit unusual in that it's generally made up of rice, side dishes and a soup or stew. But we don't always have time these days to make 5 side dishes, soup or stew and maybe even a main protein dish.😉
I've collected recipes that can usually be made on its own with rice and perhaps just a side dish of vegetables or sometimes that's not even that's needed if you make dishes like Budae Jjigae (Army Base Stew) and Bulgogi Jeongol (hot pot) - all you need is rice and maybe kimchi (for the hotpot).
