What is Water Dropwort ?

Minari, or water dropwort is an herb native to East Asia.
It is regularly used as a side dish by simply blanching or steaming and tossing in a marinade. It can also be used in savory pancakes, salads, or in stirfrys. It is one of the favorite ingredient for kimchi, fish stews and various meat dishes.
Although it is most often translated as water dropwort, it is actually unknown by any name in Western food markets.
Where and What To Buy
Fresh water dropwort is not always available, but when it is, you can find it most often at Korean and Asian grocery stores.
How to Clean/Store
Water dropwort wilts quickly. Moisture from the refrigerator can speed up this process, so wrapping the stalks in paper towel can help keep them fresher for longer. It should be used as quickly as possible to maintain freshness.
Nutrition/Health Info
Water dropwort is used medicinally to help relieve jaundiced skin in those with liver disease. It can also help with high blood pressure and diabetes, as well as issues related to the stomach, and digestion.
It is high in beta-carotene, vitamin E, iron and calcium, and contains antioxidants.
