What is Sand Lance Fish Sauce (Kkanari Aekjeot) ?
Sand Lance Sauce (Kkanari Aekjeot 까나리 액젓) is made and tastes similarly to anchovy fish sauce (Myeolchi Aekjeot 멸치액젓) but it's made with sand lances.
Sand Lance is a type of fish that like to bury themselves in sand when they need to hide. Many Koreans think the fermented sauce made from this fish tastes milder, smoother, cleaner and less fishy tasting than the common anchovy sauce (Myeolchi Aekjeot).
But basically, it can be used interchangeably or in combination with the anchovy sauce when making Kimchi.

Where and What To Buy
Korean grocery stores. May be difficult to find online but I do believe this sauce makes a lighter and more fresh tasting Kimchi. Here's link to my Amazon store item.
I usually buy CJ's 하선정 (famous Korean chef) sauce but other brands should work as well.
How to Use/Cook
Best used in making Kimchi - especially cabbage kimchi.
How to Clean/Store
The best way to store fish sauce is in its original air tight container in a cool dark place like the pantry. A constant temperature is also best. It can be stored in the refrigerator but it is not necessary.

Can contain up to about 50% the FDA's daily recommended amount of sodium per 1 tablespoon serving. Vitamin B12, Vitamin B-6, and Magnesium are present in small amounts.
