What is KkaeSogeum - Roasted and Ground Sesame with Salt ?

Kkaesoguem 깨소금 literally means "sesame salt" and so for this condiment, sesame seeds are washed, shelled, toasted and ground with some salt. It is an essential seasoning for many namul or meat dishes.

 

Not To Be Confused With

Kkae-Garu 깨가루 (ground sesame powder) or Deulkkae-Garu 들깨 가루 (ground perilla seed powder) which are just ground seeds without any salt.

Where and What To Buy

You can buy Kkaesogeum from a Korean grocery store or some online stores but there really is no reason to buy it since you can just ground it at home and add your own good quality salt.

You can either hand-grind it in a mortar and pestle in small amounts as you need them -

Or you can use a blender or chopper and just pulse a few times until some of it is ground. You don't want to chop too much because then it will start to form a ball due to too much oil being released.

 

How to Use/Cook

Sprinkle Kkaesogeum on Namul, blanched vegetables.

You can also add more salt and use as a dipping salt for Baeksuk or Fried Chicken (if it's not sauced).

How to Clean/Store

Store it in the pantry in a cool dry place and it will keep well for at least a year.
