What are Garlic Scapes ?

They are the tender stem and flower bud of a hardneck garlic plant. These are cut off to make the garlic bulbs increase in size. The stems are tender and give off a fresh garlic scent. In Korean cuisine, garlic stems are pickled in soy or stir-fried with dried anchovies or shrimp to make delicious side dishes.

Where and What To Buy

Korean and many Asian markets sell garlic scapes in late spring and early summer.

How to Use/Cook

  • Make pickles with soy sauce, vinegar and sugar or just vinegar, salt and sugar. They pair great with Korean BBQ meats
  • Saute lightly in oil with dried shrimps

How to Clean/Store

Rinse and cut off the flower buds and the bottom thick ends that are too tough to eat.
