Dried Young Pollock

Korean Name: 노가리

Romanization: Nogari

Scientific Classification: Gadus chalcogrammus

Also Known As: little or young pollack, dried little pollack

Flavor Profile/Texture:

chewy mild

Goes well with:

gochujang, mayonnaise

What is Nogari ?

Nogari are smaller younger pollacks that are dried until they're rock hard.

Where and What To Buy

Nogari is unfortunately hard to buy in Korea in recent years. So it may be to vyer hard to purchase them outside of Korea.

How to Use/Cook

It is grilled or roasted in a frying pan then enjoyed as is as Anju with some gochujang or mayonnaise. Or it is cooked by soaking and softening in water and braising it in soy sauce as a Jorim.

How to Clean/Store

Nogari can be stored without refrigeration but can also be frozen for longer storage.

  • rich in taurine and methionine, which is good for liver
  • rich in gelatin and vitamin A, which helps improve eyesight
  • low in calorie
  • helps prevent osteoporosis
