This simple Korean Chive salad is a combination of a sweet and salty soy vinegar dressing and then a garlicky punch of fresh chives. It is a great side to Korean BBQ or any heavy meat dishes.
Rinse the chives and drain. Remove any of the brown ends and cut into 2 inch lengths.
Make the chive salad dressing by mixing soy sauce, water, chili powder, sesame seeds, sugar, rice vinegar and sesame oil.
Toss the cut chives with the salad dressing to coat evenly. Sprinkle with extra sesame seeds for garnish.
