Sticky Rice Dessert

INSTANT POT YAKSIK

This easy instant pot recipe for traditionan korean rice dessert - yaksik comes out perfectly soft and chewy. A perfect balance of sweet, salty and nutty!

KEY INGREDIENTS

Sweet Rice | Water Light Brown Sugar Soy Sauce Sesame Oil Dried Jujube Dates Pine Nuts | Chesnuts

THE INSTRUCTIONS

Rinse and soak sweet sticky rice. Prepare jujube dates by rinsing and cutting to separate flesh from pit, then dicing.  Drain canned chestnuts and quarter. Drain sticky rice.

Coat the bottom of the Instant Pot with sesame oil.  Add drained sweet rice, then soy sauce, sugar, and water. Stir to combine.  Add chestnuts, jujube, and pine nuts. Seal and cook for 8 minutes on Low Pressure.

Natural Release, then using a large wooden spoon, mix the cooked rice mixture, ensuring that you mix the rice from the bottom toward the top.

Serve immediately or put into a cupcake tin for a decorative presentation.  You can also pour into a bread pan and press into a loaf. Cut and serve in slices.
