Korean Potato Salad (Gamja Salad) is somewhat similar to the classic American potato salad but different because of the extra crunch and freshness added with apples and cucumbers.
Russet Potatoes | Carrots Eggs | Cucumbers Fuji Apple | Sea Salt Sugar | Mayonnaise
Make & peel hardboiled eggs. Keep aside to use for garnish.
Peel & cut potatoes and carrots into halves and chucks.
Boil carrots and potatoes until soft (but not mushy).
While potatoes are cooking, cut cucumbers into cubes.
Cut the apple into cubes. For color, you can just core them and cut with peels on.
Drain potatoes and carrots. Set aside and let it cool.
Add potatoes, carrots, cucumbers and apples. Mix
Add mayonnaise and gently mix them all up. Then add chopped eggs. Mix again.
Add salt and sugar to taste. Mix and taste again. Mush texture is good.
